20-Minute Poached Salmon

Poached salmon is healthy and delicious, and something you may not have considered trying. Use it on a date to impress your lady/guy or just make yourself a nice family dinner.

You need:
1 1/3 lb. (1/2 Kg) Fresh salmon (losos in Czech)
1 cube chicken boullion
Fresh garlic
Basil, Oregano, Salt, Pepper
Olive Oil

1. Break off two cloves from the garlic and chop them up finely. Pour a little olive oil in a big pan (big enough for the salmon and heat on medium heat. Toss in the garlic and sautee until it turns brown.
2. Pour in enough water to cover the bottom of the pan about 1/4-inch high, turn the heat down to medium-low.
3. Add the boullion cube. Stir it well until it dissolves in the water. Shake in Basil and oregano. Too much is not enough. Stir the whole works, and take a nice whiff.
4. Salt and pepper the fish. Shake a little more basil and oregano on the top as well. Make a few small scores in the meat with a knife, then put it in the pan. It should not be submerged, only the bottom should be covered by the water.
5. Cover the pan, let cook. You want the water to simmer, not boil, so adjust the heat accordingly. Every once in a while, lift the cover and stir the mix, splashing it on the fish.
6. When the fish is nice and whitish, breaking apart easily to the touch, it is done. Take it out and cut it into slices. Serves 2 people.
